I always mess that up. Thanks for the correction. For vegan fried rice, I guess lots of tofu would be good. Chinese groceries have some interesting varieties of tofu like dried tofu skin and fried tofu that turn out nice. Also I really like some pecans or walnuts fried up with the rice. Some Chinese dried mushrooms really add a nice flavor too (I found out the hard way you need to let the mushrooms soak a while ahead of time). Oops. I always mess that up. Thanks for the correction.
